Need: 1 graham cracker crust Large bowl Electric mixer 1-quart saucepan Ingredients: 2 packages (8 ounces each) cream cheese, softened 4 squares semi-sweet chocolate, melted and cooled slightly 2 eggs 1/2 cup sugar 1/2 teaspoon vanilla Glaze: 3 squares semi-sweet chocolate chips 2 tablespoons butter 2 tablespoons light corn syrup (Note: 1 cup chocolate chips = 6 squares chocolate) Directions: - Preheat oven to 325°F/160°C.
- Beat cream cheese, sugar and vanilla in large bowl on medium speed until well blended.
- Add eggs and mix just until blended.
- Stir in chocolate.
- Pour into crust.
- Bake 40 minutes or until center is almost set.
- Cool. Chill.
- In a 1-quart saucepan, heat glaze ingredients over medium heat, stirring occasionally, until chips are melted.
- Spread over top of cheesecake.
Makes: 8 servings Variations: Garnish with some or all of these ideas…whipped topping; cherry pie filling; strawberry slices or chocolate shavings if desired.
